Sudan Rumé is a wild growing coffee tree originating from the forests of the intertropical zone of Africa, southeast of the Republic of Sudan. It was discovered in 1942 in the Boma Plateau. Before bringing this variety to the farm multiple soil studies were made leading to the best results in Las Margaritas farm. In order to be considered a natural, this variety needs a very prolonged and controlled fermentation process. It takes from 20 to 34 hours of this complex fermentation process in order to get the most exiting flavors out of these special beans.
This coffee is sourced based on its unique flavor profile and standout cup quality. It is carefully selected out of a broad range of coffees cupped just after the harvest. The coffee is purchased directly from the producer, and has justified a premium price due to its attributes and clean cup, which are a result of good processing practices. The Cooperative wet mill qualifies to our ethical and environmental standards and they have the required systems for quality control on processing, grading and lot separation.
Darwin Joel Mejia’s farm Buena Esperanza, is one of the farms at the highest altitude that we have bought from Honduras at 1800 masl. The name of the farm means ‘Good hope’, and Darwin is growing IHCAFE 90. This variety is a cross between a Timor Hybrid and a Caturra, it was developed by the Instituto Hondureño del Café and is similar to Catimor.
We found this coffee to be like a slice of apple pie, delicate and with good depth.
