About Guatemala Josefa Roast:
Josefa Ramirez Mateo is a second-generation coffee producer in the town of Concepcion Huista in Huehuetenango region. During the harvest Estelita makes sure only the ripest cherries are picked. The cherries are depulped on the same day of the picking and left to ferment in the water in plastic tubs for 48 hours. After the coffee is washed it is left for another 12 hours soaking and only after it is being washed with clean water and dried on a patio in the sun for five days.

Josefa’s farm, T’Zun-Wit’Z. is local indigenous language Popti and means “Birth on the Hill”. Josefa started with coffee 15 years ago after her parents inherited a small plantation which was 3 years old. “After this my husband migrated to the United States and from there, we managed to buy the rest of the farm that we now have as a family. We all together learn new practices to improve the quality of our coffee”, tells Josefa.

Josefa is a member of a Cooperative El Sendero which provides support and education for its coffee producing members in the town of Concepcion Huista. The cooperative supports the producers for example with adaptation towards the climate change.

We, at The Visit, aim to extensively support small businesses and to get you the very best specialty coffee for a great, delectable cup.
